Trees

It was a beautiful day today. Woke up this morning to bright sunshine, 45 degrees (yes all the snow is gone)
blue sky and happy chirping birds! So I decided it was a fine day to plant my little baby trees that the Arbor Day sent me a week ago. So I got the ol' trusty spade shovel and the cats and I went to planting 10 trees this morning. Well I planted 10 trees, they just layed around and watched me!! The life of a cat must be nice, sleep 16 hours a day, lay around the rest and eat : )
 I saw a flock of small white headed ducks on the lake, and a big blue heron watching me from one of the docks,squirrels scolding me from the trees and blue jays squabbling at the bird feeders. So, that was my morning before work today-not bad. Sure beats watching infomercials on TV!

So Happy!!

Roasted Veggies

I made a big batch of roasted root vegetables for all of us at work tonight for out supper, and can you believe that, those guys ate all of them in about 10 minutes!! It is a good thing I got a little taste as soon as I put them in the break room! I take it they liked them, I even had brussel sprouts in it and they asked what they were and gobbled them up. So if you have any left over taters, turnips, carrots just through them in a hot oven (425) with a little olive oil and let them roast you will like the end results!! I guarantee it!!

Autumn!

It is dangerous to walk out under these trees right now, for the acorn and hickory nuts that are falling like rocks out of the trees!  It is a constant bombardment on the metal roof that still makes me jump sometimes!

Here you go Mom, just went out and took this picture. The leaves are falling like snow, and it sounds like rain too. I love this time of the year,  but dread what 's right around the corner.
I just put a cheesy corn spoon bread in the oven, to take to a hogroast we were invited to tonight. They always have a HUGE bonfire and lots of good food!

Hi, Jeanie I am posting here because I still can't comment on my post!
It sure would have been nice to eat some  cinnamon bread with you I would
have gladly shared it with you :))))  That is my new go to bread to make. I found the recipe on the King Arthur Flour website 3 weeks ago, and I have made it about 4 times now. It is very easy as yeast bread goes.
We had frost this week end, and it is going to be 80 degrees all this week -it can't make up it mind what it wants to do! I took all my plants in this week end because I thought it was going to get them. Oh well, I just have it done it for later.
Happy Fall from southern Indiana!!

I just wanted to say how much I enjoyed the wonderful company that I had at my house today!  My mother and my sister came to see me today, and I got to cook them breakfast!! I enjoy cooking breakfast anytime, but for my family is even better. 
We had farm fresh eggs, homemade apple-cinn. bread, fresh brewed coffee and butermilk pancakes Mmmm good!!  So, one and all, if you can make your way to my house I will gladly fix you a wonderful breakfast!!!

Salsa !

Glad to hear Sharon you could put the tomatoes to good use,
that is a lot of sauce!  It will sure taste good when the snow it flying, and you open up a jar
and you will be able to taste summertime!!   Mmmm !!!
  I was in the kitchen making salsa again tonight ( I just  never know what I will be doing
when I come to work !)  this will be the 3rd time this tomato season. I just enjoy my job!!
It is a joy to come to work!  This will be the last time, the tomatoes are not producing any
because of the heat. Maybe she would get some more if she would water them. She ( Pam
the bosses wife) probably don't want any more, I figured up how much her 40 tomato plants
produced this summer: 42 pints of salsa, 7 qt. tomato juice, and 25 half pints of pizza sauce.
This being her first year to can anything she is probably glad it's done. 
I was just happy to cook on her 6 burner stove :)))  She cooked it all in a huge aluminum stock
pot, so I don't know it I would want to eat any of it :(   Tomatoes and aluminum don't go together!
Well I will talk later, I have floors ( at work) to sweep!

Grrrrrr!!!!!!

Still can't comment on a post, so aggravating!!!!
   So Jeanie, I will have to comment like this.
Yes, Mom should be fine, the lady wasn't tooo hard on her last time. We have all morning to run around also, since her appointment isn't till the afternoon.
That is the most beautiful tea pot, I would sure  love to have one like it !
Gas has been going down all week so far. Saturday it was  $3.79 today I noticed it was
$ 3.59. Would jump up and down if it went to $ 3.20 like said it was there !!!!!

Sharon the date was the 25th of August. It is a Thursday. I don't know how the lady is about you taking off, but the invitation is there if you can make it-would love to hang around with you for a day !
 I made the Butter Pecan cookies, they taste much better with the sugar/salt topping. I would almost cut down on the pecans and the chips a little, seemed to me there was not enought dough to hold all the add in's.  That is all, they were very good Mmmmm!

were the BEST EVER MADE . I am going to try them out on
the neighbors. They were nice enough to bring me a whole quart of  raw honey from there old friends up north, so I
can at least make them some cookies!
Off to the store to get pecans :)) !

Butter Pecan Cookies !

img_0773.JPG Here is a wonderful resipe for a Salty Sweet Butter Pecan Cookie:  

     1 1/3 c. pecans
        2/3 c. light brown sugar
        2/3 c. granulated sugar
        1/2 c. butter   ( brown the butter over med. heat then cool )
        1/2 c. shortning
        1/2 tsp. of expresso powder ( mainly for carmel color )
        1 tsp. of baking soda
        1 1/2 tsp. of salt
        2 tsp. of vanilla extract
        1 tsp. of vinegar
        1 lg. egg
        2 c. of unbleached all purpose flour
        1 1/3 c. butterscotch chips
        1/3 c. white sugar plus 1 tsp. of salt, for topping


Preheat oven to 375 degrees.  Line baking sheet with parchment paper.  Toast pecans in
oven 8 or 9 min.  Set aside to cool. 
In a lg. bowl combine: sugars, butter, shortening, salt espresso pwd.
baking soda, vanilla, vinegar beating untill smooth and creamy.
Add egg beat again, till thoroughly combined.
Mix in flour, then chips, and tosted nuts.
Refridgerate for a couple of hours, so cookies don't puddle out when baking. (can be chilled overnight).
Mix 1/3 c. sugar and salt in sm. bowl.
Scoop out 1 1/2 in. balls, roll in sugar/salt mixture.
Bake for 10-11 min.
Makes 4 doz. 3" cookies.

Tea time!

 Had a wonderful visit with my mother and sister today!  Mom went to a deep muscle therapist up here by me and got worked over.  It must of done her good because she left there standing up straighter and walking better than when she went in.  Her name it Lydia, and she is an older Amish lady.  Very nice and soft spoken but, don't let that fool you, she made mamma hollor!! 
 We go back to her in 3 weeks. I am going to take that day off so I can enjoy my company better, so if any one else want's to come please do and we will make a fun day of it!

Million Dollar Apple Pie

      Million   Dollar   Apple   Pie


Slice and pare 5 to 7 Winesap apples.
Combine in lg. bowl :
                                        1/3 c. of flour
                                        1/2 c. of sugar
                                        2 tsp. of cinnamon
                                        1/2 tsp. of nutmeg
                                        1/4 tsp. of salt
                                        sliced apples
Coat apples well, pour in pie shell.
Mix together:               
                                        1 c. of dark brown sugar
                                        1/2 tsp. of vanilla
                                        1 TBS. of lemon juice
                                        1/2 c. of soft butter
Combine well and dot on top of apples in pie shell.
Place top crust on pie and pierce top.  Bake in 400 degree oven for first 10 minutes, then 325 degree for 35-40 minutes.

New toy!

I am now the excited owner of a yogurt maker!!!!  I remember Mom, the yogurt that we used to make in Dallas and it was goood !  I know Sharon you gave me that recipe for one in the crockpot but it is a little time consuming .   The turn on and leave instrustions sounds real good to me !  Please won't ya'll come over to my house  and we will have a party! Homemade yogurt, and my freezer it full of all kinds of fruit to flavor with. The Amish Discount store now sells homemade dounuts-we could try some of those and just have a wonderful brunch!!! :)))

Hot Peppers!

Chili - Red and green chili peppersSharon did you get the recipe for mama dear?  I have more peppers for her. Is it a simple one that I could do in my non friendly canning kitchen?  By that I mean I don't have any canning things at my house. 
I put red pepper on everything I eat, so I bet the real peppers would even taste better.  They would go real good in my eggs everymorning!

Watermelon

I have been having a hankering for some watermelon this year!  It is very difficult to find any good ones around here. There are the little produce patches along the roads, but they all have melons that are brought up from Georgia!!  I don't want that, I want some good ones!!!  The grocery stores and Wal-mart only have tha little round ones too. I want a long striped melon and it is as scarce as hens teeth seems, to find. 
Do you think it is too late to plant some from seed?  I looked at some seeds and it said 90 days till maturity. I don't really want to eat watermelon in September :((  Are there any solutions ?

Good soup!

   Mama dear, I have to tell you how much I enjoyed that wonderful soup you made last Sunday!  Oh it hit the spot for my supper at work too. I work with an Irishman, here and I was nice enough to share a little bowl with him, and can you believe what he SAID !!!!!! Oh it was just preposterous!  " I am not a soup eater. "  he said ! What kind of Irishman is he anyway, so I just kept all my WONDERFUL soup to myself and enjoyed it to the last drop Humph!!

Ocean waves!

Here is the highlight of my vacation!  It was a surprise from my boss and his wife. I didn't even know you could ride on the beaches, I do now!  I would highly recommend it, if an opportunity ever arose. 
We had to be there at 7:00 a.m. to beat the heat but even that early it was sooo hot and humid and the horses were wringing wet the whole time. We even saw a small 3 ft shark washed up on the beach. Ekkk!
It was a 2 hour ride, and I had not been on a horse since 2006 when I went to Texas to see Lori!   It has taken 2 weeks to walk normally !  I would do it again though : ))))

Marengo Caves

Caves. Pretty bad when I live only 10 minutes from the caves-not been in them since 1984 when we first moved here, and have to go there with the Bloomingtom photo club to take pictures!!

the woods on a faint little path to find
the opening to see this valley. It was
worth our early rising.

Falls

This is called Hindastin Falls here in Loogootee, on the White River.  There used to me a fairly good size town here, with a big flour mill here on the river. The whole town mysteriously died out and no one really knows why, there is speculation that a sickness swept threw and killed everyone.  There is a HUGE flat rock is still there where the mill once stood with the square piling still in the rock.
I took this picture last summer, I'm sure now the dam is under maaaany feet of water!  It is also a good fishing place, everyone goes out there to fish.

It was nice to walk around the campus ( I even went bare-foot) when we had just drove 7 or so hours straight .

Oklahoma

I found this photo the other day, I don't know if anybody saw these from our trip to Texas/Oklahoma last year.  
We had just taken a walking tour of the ORU
campus grounds  and where on the way back to Andrea's house .  Very nice place.  Cody said he would walk to work if he didn't have to wear a suit and be dressed up.
